Summer is here and it is a hot one!

Lake trips, Floating the river, Hiking, Finding any kind of water at all! It’s hot and sticky but you need something to tide you over and just thinking about a cheeseburger and fries just makes your stomach turn. Don’t get me wrong I love a good cheeseburger just like the next gal but all of that grease on top of a super hot day just sounds awful. And cooking inside sounds just as bad, or maybe you’re on strike! No cooking lunch on this day! Or the favorite classic summer Barbeque! I mean, who doesn’t love a good barbeque? Picnic tables with friends and loved ones just chatting away and food everywhere! Hot dogs, Hamburgers, Barbeque ribs, oh my! On those really humid days, however, even that doesn’t even sound appealing. We need something cool and not too heavy but what?

A Caesar Chicken Salad Wrap

It’s a perfect idea! It’s a cool dish that is simply put together and the tortilla doesn’t make you think of eating like a rabbit! You can even add the croutons and bacon for that extra crunchy texture (or just eat them from the bag we won’t tell)! It’s a light lunch that is not only healthy but delicious! An even bigger plus is it’s easy to make and doesn’t take long at all. Even my kids can make it! Another plus if you also have little ones! It’s easy enough they can help with the stirring of ingredients or even helping measure! This also makes a great take to the lake, picnic, or hike premade lunch!

For one wrap I use:

  • about 1/2 cup of cold pre-cooked Chicken (I prefer a cold rotisserie shredded or you get the packaged fajita strips that work nicely as well!)
  • 1 cup of shredded romaine (or your personal preference of lettuce)
  • 1 tbsp of parmesan cheese (I use Kraft finely-shredded parmesan cheese)
  • 1 tortilla (I prefer the large tortillas)
  • about 2 tbsp of caesar salad dressing
  • bacon crumbles, I use just a few pinches
  • 1/4 cup of croutons (Texas Toast is a good one but any kind will work fine!)

In a mixing bowl combine everything but the tortilla and mix thoroughly. (Tip: Warming up the tortilla slightly in the microwave for about 10 seconds will make the wrapping slightly easier as the tortilla will soften) Add the mixture to the now slightly warm tortilla and wrap like a burrito and cut in half! It’s a quick and painless lunch in under 30 minutes and oh so tasty!

There you have it, a good, healthy even summer lunch that’s easy to make and cool for even those scorching days when you can fry an egg on your porch! And since my kids can’t just eat one thing for lunch (insert sigh) some sliced apples, peaches, or even grapes are a great side that’s not too heavy or time-consuming giving you more time for the fun summer activities!
